Biscoff Eggnog


Serves 6

6 egg yolks

60g caster sugar

250ml thickened cream

500ml full cream milk

6 heaped tbsp Biscoff Smooth spread

½ tsp ground nutmeg

½ tsp Dollar Sweets Vanilla Bean Paste

Pinch of sea salt

60ml brandy (Optional, you can also use dark rum or cognac)

Whipped cream, crushed candy canes and Dollar Sweets Gold Delight Sprinkles to serve

Whisk together yolks and caster sugar until pale.

Combine cream, milk, Biscoff, nutmeg, vanilla and salt in a medium saucepan. Bring to a simmer, stirring regularly.

Pour about ½ cup of the milk mixture over the egg yolks, whisking constantly. Gradually add the rest of the milk, whisking to combine. Once all the milk is incorporated, pour back into the saucepan, and return to a low heat. Stir for 5-10 mins until the eggnog begins to thicken.

If using brandy, stir through then transfer to a clean jug and refrigerate overnight to cool down completely.

When ready to serve, pour into glasses, top with whipped cream with crushed candy canes and sprinkles to decorate.
