
Poo Emoji Cupcakes
You will need a mini muffin tin for this recipe
INGREDIENTS:
85g butter, softened to room temperature
130g brown sugar
1 egg
1 tsp bicarbonate of soda
¾ cup milk
165g plain flour, sifted
1 ½ tsp baking powder
30g cocoa, sifted
Dollar Sweets Candy Eyeballs, to decorate
Dollar Sweets Fondant (white), to decorate
CHOC BUTTERCREAM
250g butter, softened to room temperature
320g icing sugar mixture
50g cocoa
¼ cup milk
METHOD:
Preheat oven to 160ºC.
Line mini muffin tin with Dollar Sweets red patty pans.
Combine butter and sugar in the bowl of a stand mixer and beat 6-8 mins until fluffy. Add eggs, one at a time, beating in between each addition.
Whisk together bicarbonate of soda with milk, add to the butter mixture along with the other dry ingredients. Stir until just combined.
Spoon mixture between patty pans and bake 15-18 minutes until the mini muffins spring back, when gently pressed in the centre. Allow to cool to room temperature.
To make buttercream, beat butter until light and fluffy.
Add icing sugar, cocoa and milk and beat until fluffy and combined.
Spoon buttercream into piping bag fitted with an 8mm open round tip. Pipe a large buttercream swirl on the top of each cupcake.
Roll a small piece of fondant out to about ½ cm thickness.
Use a 2 ½ cm round cookie cutter to cut round circles from the fondant then use a small, sharp knife to cut a small section from the side of each circle, to form a smile shape.
Repeat until you have 24 smiles.
Decorate each cupcake with 2 candy eyeballs, a smile shape and serve.
