DAD COOKIE CAKE
Serves 8
INGREDIENTS:
120g butter, melted and cooled
160g dark brown sugar
50g caster sugar
215g plain flour
½ tsp baking powder
½ tsp bicarbonate of soda
1 tsp sea salt
1 egg
2 tsp Dollar Sweets Vanilla Extract
110g milk choc chips
110g Caramilk choc chips (substitute white chocolate chips)
COOKIES AND CREAM ICING:
250g cream cheese, softened to room temperature
140g icing sugar mixture
240ml thickened cream
10x Oreo cookies, icing removed, biscuits finely crushed

Dollar Sweets Vanilla Buttercream
Dollar Sweets Black Fondant
3x Oreo cookies
Dad’s fave chocolates (we used white chocolate Snickers)
Lotus Biscoff biscuits
Basketball biscuits (we made our own)
METHOD:
Preheat oven to 180ºC. Use some of the melted butter to grease a 25cm round baking tin. Line with baking paper.
In a stand mixer bowl, cream together remaining melted butter and both sugars on low speed until just combined. Add the egg and Dollar Sweets Vanilla Extract to the mixture and beat until just combined.
Mix flour, baking powder and bicarbonate of soda in a separate bowl.
In batches of three, add the flour mix, beating until just combined. Add choc chips and beat on medium until evenly incorporated.
Spoon the mixture into the base of your prepared tin, use a spatula to press into the edges and to evenly smooth the surface.
Bake the cookie for 35-30 mins or until firm around the edges. Allow to cool completely in the tin.
To make the icing, beat cream cheese and sugar together. In a separate bowl whip the thickened cream to soft peaks. Fold the whipped cream through the cream cheese mixture then stir though Oreo crumbs.
Once cookie has cooled, gently remove from tin. Pipe the cookies and cream icing around the cake edge. Pipe a tiny amount onto the bottom of Oreo cookies and place into the centre of the cake in a line. Dollop a little of the Dollar Sweets Vanilla Fondant onto the top of each Oreo. Roll out the black fondant to about 2mm thick and use alphabet cutters to cut out the letters to make the word DAD. Arrange the letters on top of each Oreo cookie.
Decorate the rest of the cake with chopped chocolates, broken Biscoff biscuits and basketball cookies.
