You will need 12 jumbo patty cake cases for this recipe
Inspired by the affectionately-named Momofuku Milk Bar “Compost Cookies” (compost because they use up all the leftover bits and bobs from your pantry), this Aussie interpretation combines iconic Honey Joys and Dollar Sweets Popping Toppings.
1 tbsp honey
50g chopped peanuts
12 vanilla marshmallows, quartered
60g shredded coconut
100g Jatz biscuits, roughly crushed
Salt ½ cup
Dollar Sweets Popping Toppings
Preheat oven to 180ºC (160ºC fan).
Combine sugar, butter and honey in a large saucepan over medium heat until butter has melted and mixture is frothing. Remove from heat, stir in Cornflakes, peanuts, marshmallows, coconut and Jatz. Add a pinch of salt and stir well to combine, then divide between 12 jumbo patty cake cases, place onto a baking tray and bake 10 mins. Allow to cool completely before sprinkling Popping Toppings over the top to serve.
