Lamington Trifle

Serves 8-10

***You will need to begin this recipe the day before***


3 x 85g jelly crystals (use 3 different colours of your choice)

2 punnets raspberries

900g double thick French vanilla custard

18 finger lamingtons

300ml thickened cream

1 tsp Dollar Sweets Vanilla Bean Paste

Dollar Sweets Gold Sprinkles and mini meringues, to decorate

The day before, prepare one packet of jelly crystals according to packet instructions and pour into the base of a trifle dish. Refrigerate until set. Repeat with second packet, placing one punnet of raspberries into the jelly just after pouring on top of the set first layer. Once second layer is set, prepare third packet and pour over the top, refrigerate overnight to set.

Spoon over the custard. Arrange lamington fingers over the top of the custard. Tuck some of the remaining punnet of raspberries and some of the mini meringues into the gaps. Sprinkle generously with Dollar Sweets Gold Sprinkles.

Combine cream and vanilla bean paste in the bowl of a stand mixer fitted with whisk. Whip to soft peaks then spoon over the lamingtons. Decorate with remaining raspberries, mini meringues and star decorations.
