Rainbow Spaghetti

500g spaghetti

Dollar Sweets Food Colouring

3 tbsp butter

60ml olive oil

6 cloves garlic, crushed

30g grated parmesan

Sea salt

Cook spaghetti in generously salted water, according to packet instructions.

While the spaghetti is cooking, heat butter and oil in a small saucepan over high heat. When the butter has completely melted, add garlic, and cook until fragrant or about a minute. Season with salt.

Drain the pasta, reserving pasta water. Divide pasta evenly between 5 medium sized zip lock bags, add 2 tbsp reserved pasta water and a few drops of different colour food colouring to each bag and seal closed, shaking the bag to coat the spaghetti. Allow to sit for 2 mins before rinsing each bag of spaghetti under warm water to wash off the excess colour.

Combine spaghetti and garlic butter sauce in a large bowl, toss to combine then divide between 4 large bowls and serve with a generous sprinkle of parmesan cheese.
