INGREDIENTS
300g store-bought chocolate brownies
6 x 700g eggs, separated
300g dark chocolate
3 tbsp unsalted butter, plus extra to grease
600ml thickened cream
1 packet Oreos, cream scraped off and discarded

METHOD
To make the base, place brownies in food processor and blend to a fine crumb. Grease a 20cm round springform pan with melted butter and line the base and sides with baking paper. Press the brownie crumbs into the base. Use the bottom of a drinking cup to press the crumbs in tightly and make a flat surface.
To make the mousse, in a small dish combine chopped dark chocolate with butter and microwave for about 50 seconds, until hot enough to melt chocolate. Stir until smooth and set aside.
Whip the egg whites to soft peaks.
In another bowl whip the cream to soft peaks.
Whisk egg yolks into the dark chocolate mixture then very gently fold the whipped egg whites and cream into the mixture. Pour the mousse over the brownie base and freeze for a least 4 hours.
To make the “dirt”, place Oreo biscuits (with cream scraped off) into a food processor and blend to a fine crumb. Once the mousse is frozen hard, remove from tin and sprinkle the top with Oreo “dirt”. Decorate with Joocers Halloween Bugs n Grubs.
