AFL Stadium

Serves 12 (2 mini cupcakes per person)

You will need Dollar Sweets Coloured Patty Pans (mini size), piping bag and a Wilton 233 piping tip for this recipe.

INGREDIENTS:

225g butter, room temperature, plus extra for greasing

300g caster sugar

6 extra-large (60g each) eggs

350g plain flour

½ tsp bicarbonate of soda

250g low-fat natural yoghurt

2 tsp vanilla bean paste

Store bought buttercream, to decorate

Green gel food colouring

Dollar Sweets 100’s and 1000’s, to decorate

Dollar Sweets Dollar 5’s (green sprinkles only) to decorate

8 Pocky biscuits, to decorate

METHOD:

Preheat oven to 180ºC (160ºC fan).

Line a 24 hole mini muffin pan with green Dollar Sweets Coloured Patty Pans (mini size).

Use a stand mixer or handheld beater to beat butter and caster sugar together until pale and fluffy.

Add the eggs, one at a time, whisking each one in with a tablespoon of flour.

Use a spatula to fold in the remaining flour and bicarbonate of soda, then fold in yogurt and vanilla until combined.

Divide half of the mixture evenly between patty pans and bake for 20 mins until golden (leave the oven on).

Remove cupcakes from muffin pan and allow to cool on a baking rack.

Line the pan with yellow mini patty pans. Divide the remaining butter between the pans and bake for 20 mins until golden.

Remove cupcakes from muffin pan and allow to cool on a baking rack.

Once cupcakes are cool, pour 100’s and 1000’s into a small bowl. Use a knife to spread a thin amount of buttercream on top of the yellow paper cupcakes and dip in 100’s and 1000’s to coat.

These cupcakes will be the crowd of football fans, which will make up the stadium border.

Colour remaining buttercream with a small amount of green food colouring to achieve a grass-like shade.

Fit a Wilton 233 piping tip to a piping bag and fill bag with green buttercream. Pipe buttercream onto the green paper cupcakes to make a grass appearance.

Sprinkle with the green sprinkles from Dollar Sweets Dollar 5’s.

Closely arrange decorated grass cupcakes in a rectangle – 4 cupcakes across and 6 cupcakes down.

Arrange spectator cupcakes in a border around the grass cupcakes.

For goalposts, at each end of the grass cupcakes poke a Pocky biscuit into the centre two cakes.

Cut ¼ off the remaining Pocky sticks and poke into the adjacent cupcakes to make behind posts.
