Fairy Bread Matcha

Makes 2 large drinks

Prep time: 20 mins


1 slice white sandwich bread

1 tbsp unsalted butter, melted

500 ml full-cream milk

2 tbsp strawberry drinking powder

1 tsp vanilla extract

Pinch of sea salt

Ice cubes


MATCHA CLOUD

100 ml thickened cream

1 tbsp caster sugar

1 tsp matcha powder, sifted

1 tbsp sweetened condensed milk


Toast the bread and generously spread with butter. Roughly tear up the toast and add to a blender with the milk, strawberry drinking powder, vanilla and salt until smooth.


Strain through a fine mesh sieve to remove crumbs, then chill or pour over ice into tall glasses.


To make the matcha cloud, whisk cream, sugar, matcha and condensed milk together until soft peaks form.

The mixture should be thick but pourable, with a glossy texture.


Spoon the matcha cloud over the strawberry milk.


Garnish with a whole strawberry and a sprinkle of 100s & 1000s.
