Fairy Bread Pavlova with Fairy Breadcrumbs

Serves 6-8

Prep time: 20 mins

Cooking time: 10 mins

 

1 store bought pavlova

300ml thickened cream

Blue food colouring (optional)

Fresh berries, to serve (we used raspberries and white-chocolate dipped cherries)

 

FAIRY BREADCRUMBS

2 thick slices brioche (about 120g)

2 tbsp salted butter

2 tbsp Dollar Sweets 100s and 1000s

 

To make the fairy breadcrumbs, rip brioche into large chunks and smaller crumbs (you want an irregular consistency here to add texture to the topping). Place a large frypan over medium heat, add butter and melt until frothy. Add breadcrumbs, stirring to coat, and frying until toasty and golden. Remove from heat then cool completely before stirring through the 100s and 1000s.

 

To assemble, carefully place the pavlova onto a serving plate.

 

Whip the cream until soft peaks form (we coloured ours blue for a bit of fun, but this is optional!). Generously spoon over the pavlova then decorate with berries and finally sprinkle with fairy breadcrumbs just before serving.
