100’s and 1000’s Cookies

INGREDIENTS:

Makes 20 whole slices or 40 half slices

We used an 8cm long bread-shaped cookie cutter, available at online stockists.

If preferable, you can cut squares from the dough.

  • 430g butter, softened

  • 190g caster sugar

  • 540g plain flour

  • 1 tbsp mixed spice

  • 2 tsp vanilla bean paste

  • Store-bought buttercream, to decorate

  • Dollar Sweets 100’s and 1000’s, to decorate

METHOD:

Combine butter, sugar and vanilla paste in a bowl, use an electric beater/stand mixer to beat until fluffy and pale (about 5 mins).

Add flour to butter mixture and fold through until just combined, being careful not to over mix the dough.

Turn dough out onto a lightly-floured surface, form into a disc, wrap in plastic wrap and refrigerate for an hour to rest.

Preheat oven 150ºC conventional.

Using a floured rolling pin, roll dough out to 0.6cm thick.

Use an 8cm long bread-shaped cookie cutter to cut 20 slices from the dough.

You can leave the bread “slices” whole or cut them in half diagonally depending on how you prefer your fairy bread.

Transfer to a baking tray lined with baking paper.

Bake for 20-25 mins then remove from oven and allow to cool completely on tray.

Once cooled, spread biscuits generously with buttercream and sprinkle with 100’s and 1000’s to decorate.
